Making Maple Syrup

Step 1: Tapping your tree
Equipment:
  • Tap or Spile
  • Sap Bucket or Pail
  • Drill & Hammer
  • Maple Tree (25+ diameter for 1 tap)
How to:
  • Drill an upwards slanted hole 5-8cm into the tree at waist height
  • Insert tap or spile and gently hammer into the hole
  • Hang the sap bucket or pail on the hook attached to tap or spile

Note: Sap only flows when the daytime weather is over plus 0C, but the nighttime dips below freezing. Sap will not keep unless it's cold. Check your buckets daily, and refrigerate if needed. 40L of sap is required to make 1L of maple syrup.

Step 2: Boiling your sap
Equipment:
  • Pot
  • Heatsource (fire or stovetop)
  • Cheesecloth or Filter
  • Thermometer
  • Syrup Storage Container
How to:
  • Bring sap to a roiling boil, until it reaches 103.8 (Careful, this process is very sticky, and the steam can remove wallpaper from your walls!)
  • While still warm, filter through cheese cloth to remove any sediment
  • Enjoy!
